813 Bread Co. was born out of a journey I never expected.

Our story

Before bread ever became part of my story, I was a nurse. I believed deeply in helping people heal, and I trusted the systems and education I had been given. But everything changed when my son was diagnosed with autism.

That diagnosis became the beginning of a much deeper journey, one that pushed me to ask harder questions about health, nutrition, and the environment we live in. I started looking beyond surface-level answers and began searching for root causes. What we eat. How our food is grown. What has been removed, altered, or replaced in the name of convenience.

As I worked to improve our lifestyle and support my son’s health, I began to realize how disconnected modern life has become from the way things were originally designed. That search for healing didn’t just change how we lived, it changed how I saw everything.

Including bread.

Like many people, I had grown up believing bread was something to avoid. Something “empty.” Something that caused issues instead of nourishment. But as I learned more, I discovered that the problem wasn’t bread itsel, it was what we had done to it.

Modern flour is refined, stripped of its fiber, oils, enzymes, and nutrients, then stored for months before it’s ever baked. What remains is shelf-stable, but nutritionally depleted. In many ways, it’s a lifeless version of what grain was meant to be.

When I learned about freshly milled flour, whole wheat berries ground just before baking, everything clicked. This was bread as it had been made for generations. Grain fully intact. Nutrients preserved. Oils and enzymes still alive. Bread that nourishes instead of depletes.

As I began baking this way, I noticed something else happening alongside the physical benefits: a spiritual awakening.

In slowing down, working with my hands, and returning to simple ingredients, I found myself drawn back to God. I started reading the Bible more intentionally, and passages I had read before suddenly carried deeper meaning. “Give us this day our daily bread.” Jesus calling Himself the Bread of Life. Bread wasn’t just food, it was provision, sustenance, and connection.

That realization stayed with me.

Bread became more than something I baked for my family. It became a symbol of restoration of returning to what was always intended. Of honoring the body, the home, and the table.

813 Bread Co. was created to share that with others.

The number 813 holds personal meaning for me and is a reminder that this journey is purposeful, guided, and deeply rooted in faith. Every loaf is made using freshly milled grain, simple ingredients, and a slower, more intentional process. No preservatives. No shortcuts. Just real bread, made the way it was meant to be.
